Orzo Pasta Salad & Thank YOU Rocky Creek Scotties!

Geezers...tis been a full week since I posted. Summer has proven
to be quite busy around our neck of the woods. Our little
tomato garden is flourishing with plump and juicy little
red delights.
A perfect time to whip up an Orzo pasta salad...
...with fresh basil, green onions, sliced tomatoes & mozzarella cheese.

Remember the Stick Out Your Tongue contest over at Rocky Creek Scottie Adventures blog?
Our Duhgall boy won his first contest and his name was drawn from the over 130 entries.
His package arrived the other day in the mail ....
...with a sweet note tucked inside from Lilly, Piper, Carrleigh and Java. I did point out
to Duhgall that he is to share with Miss Fi....yeh, right!
Aren't they just the cutest bunch of tongue waggin' sweeties? I am sure life on the farm is plentiful with gratuitous doggy licks and lap naps.
Duhgall had quite a fun time with his special delivery.

Before I break into the story, let me share this precious chenille scottie that was tucked inside for Moi. Thank you, Lynn!
Now onto the doggie booty....Lots of fun things ....
...check out that tongue chewy! Oh, and I have been wanting a traveling dog bowl, too!
This is just a riot!
The "tail" goes as this:
I tell Duhgall that he got a box delivered and he comes running out of nowhere all yippy skippy, tail wagging and doing that little jovial bouncy scottie run.
Out to the porch we go...a bit confused as how this box got there...but after
some sniffin' he soon lost interest in the method of delivery...

....and had to stretch before beginning the task of getting the box opened.
"Maybe if I sink in one of my rat-tearing canines, I can get this box opened!"
Duhgall finally gets that boxed opened up and no sooner does he pull something out, little Fiona runs off with each item!
Pardon the blurry photos, but this is a day of joy for our busy pooches! Fiona says, "Look Maw! This is bigger than me!"

What else is in there Duhgall?
He diligently checks out each and every treat!
Oh, Oh! Don't shred that cute pillow!
...and they both are quite interested, as you can see.
Perhaps I can distract them away from my stuffed scottie and interest them in the string chewy....seems to be working....

Duhgall LOVES the tongue chewy and took off into the living room with it. Miss Fiona was really wanting to have first grabs...but the bigger dog exercises his "alpha" role....
...and chews.....
....she waits.....
...and she waits......
....and moves in a tad closer....
...he chews...
...and chews....
.....and chews some more.

Orzo Pasta Salad

Orzo Pasta
8 -10 cherry tomatoes
8 fresh basil leaves
2 green onions
salt
pepper
extra virgin olive oil
1/2 cup of fresh mozzarella cheese - cubed


Boil two cups of orzo according to the instructions on the box.
Drain and put the orzo in a bowl and stir in 2 Tblsp of extra virgin olive oil. Cover and refrigerate till cooled.
Slice the cherry tomatoes in quarter slices (little wedges). Chop the green onion and basil leaves. Cube the mozzarella cheese.
Add all ingredients into the pasta and stir. I usually add more olive oil to the pasta (about another 2-3 tablespoons). Salt and pepper to taste.

I love your blog! I also have a scotty dog collection at my house (not the real kind, but someday i'd like a scotty dog and westie!) My real dogs are a Cairn terrier (very much similar to your Fi--in color..!) and a corgi. And cherries are part of my decor. Kitchen especially..anyway i'm enjoying it here and will keep returning to read more! hugs to your doggles from my doggles.

That salad looks delicious! I used fresh basil this weekend... YUM! My favotie is to add it to a regualr lettuce salad! Delicious!

Bailey also got her package, unfortunetly my dad was out of town and my mom didn't take any photos! Dang!

I made a salad Saturday with pasta, zucchini, bacon, onions and tomatoes. I have fresh basil on my deck!!! Why didn't I think of that??!! I'll have to try yours.
Wanted to let you know I got the Vintage Cottages book from the library and DID love it. You know one of my favorite parts was the story in the front of the book of the doggie they took into their home. Made me tear up at the end...

The tongue chewy toy is hilarious! I want to try the orzo salad. A friend of mine brought a salad with orzo, spinach, pine nuts and feta to dinner the other night. It was so good. We have lots f fresh basil in the garden though and this sounds like a great way to use it. Thanks Becky:>)

Oh Becky how gorgeous are Duhgall and Fiona! I love the pics of them and the way they are so intent on Duhgall's treats! I totally understand the blurry dog pic thing, I can't seem to get a clear shot of my dog either, they just move too much!

Duhgall, I always knew you were a winner and this sure proves it!
What delightful fun he and Fiona had with all the prizes. Typical Scotties through and through--horders! LOL I must look for that ever so lovely ;-) tongue toy. It seems to have been a big hit.

The Scottie pillow is just the sweetest. Would you put it on the guest bed please? I think I'll come over for lunch today if you have some of the yummy salad left. It's a long trip so I'll need to rest over.

I wish my tomatoes looked like yours. It was just too hot here and most of them turned yellow and fell off. Do you remember what variety you planted?
