The Best Buttermilk Pancakes

I would like to share this wonderful Buttermilk Pancake recipe with you. My family loves pancakes and they say that once you have had these others will pale by comparison!


So you be the judge and let me know what you think.


In our house these are called Panny Cakes, Flap Jacks, Pancakes, Griddle Cakes and just plain goodness graciouis OHMYGOD yummy cakes! The secret to having this recipe work for you is to have new baking soda on hand.


The Best Buttermilk Pancakes



1 C Buttermilk
1 egg at room temp
3 TBLSP butter, melted
¾ C all purpose flour
½ tsp salt
1 tsp baking soda


Note: optional: I add about 1/4 tsp of sugar


Let the mixture rest for about a half hour in the fridge.



Put the buttermilk, egg and melted butter in a mixing bowl. Stir briskly until the mixture is smooth and blended.



Stir the flour, salt and baking soda together in a small bowl. Stir into the buttermilk mixture only until the dry ingredients are moistened - leave the smaller lumps.



Heat a skillet or griddle to medium hot. Grease lightly and spoon out a 3 TBLS of batter per pancake. Cook until a few bubbles form on top and break. Flip the pancake over and cook until golden brown..not too long.

Makes 6-8 cakes

These do look very yummy. Similar to my recipe.. but not exact. We eat a lot of pancakes it seems! Keeps Mrs Butterworth in business.

I wonder if people know you can make pancakes without a box of mix.

These sound great! Do you mix them up and let the whole thng sit in the fridge for 30 minutes, or just mix the wet ingredients and let them sit?
