.....ohhhh...it makes the house smell soooooo good!
My sweet Australian friend, Kate, shared this recipe on her blog last week. I had a few very, very ripe bananas to use and gave it a try. Let me tell you friends, it is wonderful and my family gobbled it up in no time at all! (note to self: make two loaves next time!). Thank you, Kate, for sharing this awesome goodness with us girlies!
Add dry ingredients together...First smash up two very ripe bananas in a bowl...
Add the bananas to the wet ingredients....Mix wet and dry together and bake...
...and Voila! You have the most tender banana bread!!!

Banana Bread
1/3 cup shortening (I used butter instead)
3/4 C light brown sugar
1 cup mashed bananas (2-3 bananas)
2 eggs
1 1/2 cups flour (I used Self Rising Flour and omitted the salt and baking soda)
1 tsp salt
1 tsp baking soda
1/2 cup milk ( I used buttermilk)
1/2 cup chopped walnuts
3/4 C light brown sugar
1 cup mashed bananas (2-3 bananas)

Cream the shortening (or butter) with the sugar. Add the mashed bananas and eggs. Sift the flour with the salt and baking soda and add to the creamed mixture, alternating with the milk. Stir in the nuts. Bake in a greased loaf pan, 8 1/2 x 4 1/2 x 2 1/2 inches, in a moderate oven, 350 degrees, for an hour. Turn out and cool on rack; wrap in aluminium foil. this bread slices better the second day. Yield: 1 loaf
These are Kate's Tips that I used, however I used buttermilk instead of milk.
"This recipe is much better if the bananas are very over-ripe
I usually omit the salt
I use butter instead of shortening.
I usually substitute self raising flour for the flour and soda
(Kate doesn't use the nuts, however I used the walnuts).
Cooking time will be about 10 minutes less if you are using a modern fan-forced oven."

Yum! Banana bread has always been one of my faves. I started making it in 4-H many, many.....many years ago!! LOL

Gotta love those Scottie "tug of war" games. I'll have to post a picture sometime of how I keep Piper from stealing the insoles out of my shoes - he loves the right foot insole out of my Merrill fuzzy clogs for some reason - it's now about 2 inches longer than the left one!!LOL I've ordered a new pair and I'm going to hide them from his little thieving self.
ReplyDeleteThe dog sitting pretty in today's post is Piper - he's the son of Copper Top so that gives you an idea as to his coloring. If I had of realized how red he would be, I would have named him Roarie (red king). Carrleigh is more of a platinum blonde - OH LA LA!!

Yum-O! I just made banana bread this last weekend. This recipe looks great, I have never used buttermilk or tried butter instead of shortening, how could it NOT be better with butter:>)?
ReplyDeleteMy daughters cat is a sock theif too. She doesn't play tug-of-war, she steals Vickys socks, hides them all over the house and meows in the most pitiful manner as she hides it. Victoria is gone to college and I think she is missed!

I won't leave her in the car so she has to stay home. I wish I had two dogs so she would have some company. I play with her but not often enough.
