Two fresh loaves of my favorite Pumpkin Bread ~ right out of the oven!

Tis the season to break the bread! Pumpkin bread that is! This bread has a great texture and if you wrap it in plastic wrap and foil afterwards, it will stay good and moist. The recipe is at the bottom of this post. Good news, my dad is back home and doing so much better than last week. Many thanks to all of you sweet and lovely people who have said a prayer and for your kindness!!!!
I would also like to share a wonderful Halloween treat that Marian made!! I found her site via Heidi's site and just love her collections of old sewing items! Check out this cute cat that she made!! After seeing something similar to it on another blog, she made one for herself. They are not for sale though.....but what a great inspiration for those crafty women out there!!! You all know who you are!

Pumpkin Bread
3 1/2 Cups all purpose flour
2 tsp baking powder
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 Tblsp ground cinnamon (I add a little more)
1 Tblsp ground nutmeg (I add a little more)
1 Tblsp ground nutmeg (I add a little more)
2 1/2 Cups sugar
4 large eggs
1 cup canola oil
one 15-ounce can of pumpkin puree
1/2 cup water
1 tsp vanilla extract
Preheat oven to 350 degrees
Grease and flour two 9 x 5 inch bread pans
Sift the first six ingredients together and set aside.
Mix the eggs, sugar and oil in a seperate bowl - until blended. Stir in the pumpkin, water and vanilla. Mix well.
Add the flour mixture to the wet mixture and stir it up until all of the ingredients are moist, but don't overmix.
Pour the batter evenly into the bread pans. Bake for 1 hour, or until a toothpick that is inserted in the middle comes out clean.
Remove from oven and allow the pans to cool down for 15 minutes before attempting to remove the loaves from the pans.

I love anything with pumpkin in it. I made a dessert called Pumpkin Surprise the other day. I was going to post about it on my blog, but we ended up eating it all before I could get pictures, etc. Hey, maybe that gives me a reason to bake it again!

YIPEE!!! Your dad is home.... great news, my dear friend!!!!!! Doogs is precious. Have I told ya that we had two scotties growing up? They are great dogs! My mom used to make pumpkin bread all the time. For a treat, she would slice, spread with butter and then fry it up in a pan.... killer.... you will eat it until you can't move! Love!!!! Esther

That pumpkin bread looks delicious.
ReplyDeleteHere in Australia, apart from pumpkin scones, we tend to use pumpkin in savoury dishes as a vegetable, whereas in US it seems mainly used in desserts or sweet things. I don't think I have ever seen canned pumpkin here.
So, so glad to hear your dad is at home! No place like home!
