Fresh Peach Cobbler

 There is something about a fresh peach cobbler that screams summer is here!  We have a wonderful ranch in our town, The Smith Ranch, that town-folk and out of town-folk flock to during peach harvest time.  You have to get to the fruit stand early because these peaches go fast.  Seriously fast.  They are THAT good!

The peaches are really the very best that I have ever had.  Sweet, tender, juicy and don't watch me eat one because it ain't a purdy site watching the peach juice roll down my arms and chin.  My audience is usually the scotties and all they care about is if a morsel may happen to fall down in their direction.
 Because we are now a Gluten-Free household, I am learning to adapt to baking and cooking for our new diet.  I miss Gluten and may I just say that being GF really sucks big time!  However, having Celiac Disease isn't fun and sacrifices have to be made in order to be healthy.  (But oh how I miss my chocolate chip cookies!)  

I used GF Bisquick for the topping.  (This box was nearly $7.00 - sticker shock! - and there is about 3 cups of mix to use.)

For the topping I used 2 cups of Bisquick, cut in one cube (1/2 cup) of cold butter, added 1 cup sugar, 1/2 cup milk (or enough to make the dough hold together), 1 beaten egg and 1 tsp vanilla.  

For the peaches, I added 1/2 cup sugar and 2 tablespoons of corn starch.  Mix it up and place the peaches in a glass pan.  Spread the Bisquick topping over the peaches and bake at 375 for 45 minutes, or until the topping is a golden color.


Delicious!  Pardon me..... I must go and pig out!!!!  A cup of hot French Roast and hot peach cobbler...life is good...even Gluten Free!

  2. Ditto your observations about PicMonkey. Ohhh, that does look yummy. So many wonderful recipes out there for celiacs these days. We were recently treated to gluten free whoopie pies and they were really very good. All the specialty stuff is so expensive...not fair!

  5. There's something very similar to that sitting on my stove right now! I have the most wonderful memories of my grammie serving me fresh peaches and Crystal Vanilla ice cream for breakfast in the summertime.... mmmmm yummy! :)

  7. I love peach anything and this cobbler looks especially tasty. Eating gluten free must be challenging, but I'm glad you were able to make your cobbler and eat it too :).

  8. Yum yum! While we were visiting my Mom this summer, she made peach cobbler that was to die for but they were not gluten free. My body has still not forgiven me. By the way I love pic monkey too.

  9. OMGOSH- That sounds sooooo good. I love fresh peaches but not canned ones so this sounds wonderful to me. I have not seen the glutten free mix here anywhere. I don't do any flour or sugar...it's been over a year for me and I don't miss it anymore at all- xo Diana

  10. I didn't know that you had Celiac. I do as well. My son does also. It does stink. The prices are just awful. Betty Crocker has a mix for chocolate chip cookies as well as brownies and a cake mix. They are really good. We recently had a better brownie mix that was so good.
    Udi makes the best bread and pizza crust.
    I will be trying this for sure. This akes a great pancake too. Just doesn't go far enough for the price.

  11. It does look yummy. I'm going to look for peaches tomorrow. I agree...the price of Bisquick is too high...but it does make good pancakes too!

  12. Becky, here is a recipe for gluten-free chocolate chip cookies. Just get yourself some Honeyville almond flour and make these! They're yummy! I make them all the time. They have a rich, nutty flavor as if you added pecans (probably from the almond flour, methinks). The palm oil shortening is at my Kroger grocery store. Not sure how hard it would be to locate in your area, but there's always online.
