Comfort Food - Kahchoo!

Nothing beats comfort food.
Sneeze.
Hack.
Sneeze again.
Mumble....sneeze...cughcugh...yack.
I am in need of a warm blankie, some TheraFlu and watch the movie The Holiday for the third time...but will settle for a plate of Chicken Divan at this moment. It is warm and comforting to the soul.
Give it a try sometime.....
Chicken Divan
* 1 large bag of frozen broccoli, rinsed and drained well (or you can use 1 bunch of fresh that is cooked).
* 6-8 chicken breasts that are cooked and chopped into 1-inch cubes
* 2 cans cream of chicken soup
* 1 cup low fat mayonaisse
* 1 Tablespoon lemon juice
* 1/4 tsp curry powder (note: I use 1 tsp because I love curry)
* 1/2 cup shredded sharp cheddar cheese
Preheat oven to 350 degrees F.
Butter a 13 - 8 - 2 inch baking dish. Arrange broccoli on bottom of dish. Layer the cooked and cubed chicken over the broccoli. Combine all of the other ingredients and pour over the chicken and broccoli.
Cook uncovered for 30 minutes - until bubbly around the edges.
Serve with rice, green salad and a good crusty baguette.

  7. watch 'the notebook' while you are resting, as well. but stop it when she gets out with her luggage. that way, you don't cry and stuff up your nose more :)

  17. Hey Beck - hope you get to feeling better soon sweetie! The recipe looks divine, ah, divan :o) Oh, and "The Holiday, I've seen it at least 5 times. The "Three Musketeers" moment under the tent is one of my favorites...as is the line "I should be the leading lady in my own life". Great movie!

    i'm enduring mini migraines from my new hrt...i really want this one to work, so i'm giving it a few more days b4 i complain to the doc

    Being thrown into immediate menopause is the pits but i know if was best for my overall health...my last tablets didn't work AT ALL!

    i hope you are feeling much better. nothing better than warm, gloppy, salty comfort food!

    question about the holiday, since you have now seen it 3 times ... i saw it in the theater when it first came out and left feeling all sad for jude law's character. how would it work out for him and cameron's character? then he'll be all sad again. i'm better off watching you've got mail for the zillionth time.

    anyway -- your shutters were painted again today. this time a few coats of a taupe-y white. i'll email pics soon!

  37. Hi Becky, Your picture of the bird at Monterey really brought back a funny memory.
    Last time we took the grandkids with us, we had dinner at Bubba Gumps. They seated us at a table over looking the water. We had no sooner sat down when that guys brother landed on a post right outside our window. The kids were just delighted...until.. our food arrived. That bird sat looking in at us the entire time we were eating with saliva just dripping from his beak! Even the kids were finally grossed out. We have laughed at it several times since and your picture brought back a real tickler for me!

  39. Hope you are much better by now. I used to make that chicken recipe back in the 70s, yep, I *am* that old. I haven't thought about it in years and I know Bob wouldn't eat it. Hmmm...maybe I will just make it to share with some of my gal pals.
